Thanks everyone for the hint, I was able to succeed in the following way:
Install and activate the Gservices (3 in total and downloaded from the stock App Store of GrapheneOS)
Download Telegram from Aurora, I didn't succeed with the version downloaded from their official website, weird but it is what it is
Register your account, maybe better to login also in the web
Disable the GServices but keep this Telegram version, I didn't succeed to use the FOSS version, it didn't send the code notification to the other app, or probably that needed to be in a different GrapheneOS profile. Whatever, I lost patience and I keep using the official app from the Google Play Store. I don't know if there is a way to receive the SMS instead of the App notification, but it didn't happen to me...
Regarding the real goal of this thread, I saw that Google Services don't have access to any harmful permission, plus they are permanently disabled once you disable them, so you won't see them ON at the next reboot, fantastic.

This is a big disappointment, now I'm forced to install another browser, probably Firefox from weird sources.m4ri0g thank you, I installed the version from their website, so they don't ship the FOSS version...
In another conversation I was recommended to install the Gservices as it's required by the app that you install from Google Play, so I guess that both Google Play and the standard version from their website have the same Google dependent version...
What do you think about the anonymity level instead?

I'm using Orbot and interestingly, you can select the apps to be routed through Tor.
If you run it as VPN kind of service on Android, it acts also as a kill switch.I wonder how it does it, because if I install Tor in a Linux distro, it doesn't have such capability and for reasons I know, so how can it do that on Android?
Does it take the app namespace on Android? I can't think of a different way.Hi,
I need the Google Services only for Telegram at the moment.
Suppose that I don't use an email address with the Google services, which reduces drastically the tracking and info association, can this process reduce my anonymity level when using Wifi?
I also disabled the Satellite based info, and I wonder why they are not disabled by default.

I granted all the necessary permissions, but not stupid things like Camera and Microphone, but it doesn't send an SMS, neither it blocks me if I try for many times, so it seems that something is not working in the OS, or maybe the app installed from their website needs the Google Play services??Shall I use the FOSS version? do you see it as an issue if the SIM can be activated only from the main profile? I can't see the option at all in the secondary profile under "Settings" -> "SIM", I can only set the Airplane mode.

de0u It's just my computer, which is supposed to be identified by GrapheneOS as a backup target.
So at the moment I can't get the backup out of GrapheneOS manually, because I'm not sure what folder it's being used for the backup, I see one in the root tree of the filesystem but I can't be sure if that's the only one...

The problem with custom domain is that they can see the originating email relay and also the sender server address if I'm not wrong, you just need a tool in your infra that gather these info for you and it's all automated, these info are also public.
