hakayova Second your request, but in the meantime there's Floris & GBoard. I've got both installed. Floris is nice and highly customizable with regards to themes. It also supports swipe/glide typing, and does it nicely. GBoard is more functional with predictive text and more useful (to me) autocorrect, as well as having swipe of course. I set GBoard to only have Sensors permission, nothing else and it works well. Some of the GIF support is unavailable this way, but that's a reasonable tradeoff for GBoard to not phone home to google. To clarify, these observations are only for English, I haven't tried other languages.

I tried compiling the glide fork of OpenBoard, which failed due to some deprecated Gradle features used in the code and opened an issue about this. Thank you for suggesting this keyboard.

I ended up following your recommendation of using Gboard without network access, which is working well. I don't use GIFs anyway, so it wasn't a deal breaker for me. Thank you for guiding me!

[deleted] Cheers for mentioning the OpenBoard fork with swipe functionality. Might give this a try.

I'm currently using Florisboard and the gesture typing can be a little off. They are still working on it though, but it works quite decently.
