The sensor permission is on by default for all apps, because on stock OS apps are not designed to work without the sensor permission, it's only GrapheneOS that does, and disabling the permission will break some things.
That said, for many of the android apps you can disable sensor permission for those, and not break anything. Just don't disable the sensor permission for any of the system apps (shown by pressing the 3 dots). That would be far more likely to break things.
