Some "maximum security" settings may increase the risk of losing data. For example, the "maximum security" setting for the USB-C port will make it impossible to unlock the device with a USB keyboard if the screen or touch sensor is broken.
In terms of "good practice"...
- Use a PIN of at least six randomly-chosen digits (longer is better, and a passphrase is better yet),
- Consider installing a VPN (and using a trustworthy VPN service),
- Avoid installing privacy-invasive apps.
Beyond that, it depends a lot on what it is that you most wish to protect from whom, since it's generally not possible to conceal everything from everybody.
