If in the UK, look at your credit card statement, who have you paid? Is it the retailer or google? If the retailer then you will get additional protection and more security against the retailer under Section 75.
Whilst that doesn't answer your main security question, it does offer justification for keeping plastic, and not letting google reap in more money from fees.
Additionally, I understood that google pay was not working with NFC on GOS, and why would you want to walk around with NFC constantly on when its operation is simple?
Your cards should be safe as the proximity required to activate a card is quite small, so it should be obvious to see someone trying to scan your wallet, especially in a jacket pocket
