Hey--I run both platforms and I think you can't go wrong either way for security. By far the greatest vector for malware/'hacking' will be through vectors like browser extensions, clicking on phishing links in emails/texts, user error stuff like that. Both platforms are well hardened against that type of malware, but if your concern escalates above that into directly being targeted by the state or another similar scale adversary then I'd 100% go with GOS.
As far as privacy goes, GOS wins imo. iOS has a reputation for good privacy but I've noticed from my controlD logs that my pixel running GOS has no background/idle network chatter and sends out no telemetry, whereas the most blocked domains are all iOS telemetry from my iphones. GOS also does a better job of letting you fine tune app permissions with deeper control than iOS imo, such as with storage scopes.
I will say the downside of running a multiplatform setup is losing out on the ecosystem of convenience, especially for your situation coming from an all-apple setup. If you don't feel super inclined to stick with icloud, safari, keychain, etc there's many cross platform apps to replace those like ente, brave, other password managers, etc that you can run on macos and GOS.
Also imo the best way to harden your personal security goes beyond what OS you use--freezing/locking credit reports, using email aliases for everything, 2FA on all accounts, and removing your info from data brokers is far more impactful imo.
GrapheneOS can I just say what an absolutely fascinating read this entire thread has been, i had zero clue f droid's security was so borked. until today most of my apps were from obtanium, accrescent, and f droid, but after learning all this i uninstalled f droid and replaced my f droid apps with either the play store version or directly from obtainium. thank you so much for keeping security at the forefront
So I use both ios (work phone) and grapheneos (personal phone) every day, and really the only thing I felt was "missing" on GOS is just a tap to pay wallet and by design that isn't an option so it doesn't even really hinder me that much, I just started using a magsafe wallet with the pixel so i don't forget to bring my cards anywhere. Aside from that I feel like getting into gos actually helped me improve my ios setup and i replaced a lot of the apps i use on ios with available foss alternatives like organic maps, the proton suite, ente, signal, etc. ios is very limited in some aspects, especially with browsers, but what i learned from gos helped me harden my ios setup and take full advantage of apple's privacy/security features
Honestly AA wifi sucks donkey balls (esp the super old CRJs) and any amount of privacy/security hardening seems to break the login/payment page and general connectivity. I'm actually on an AA flight rn and I can literally watch the little wifi icon appearing and vanishing several times per minute. Taking me several minutes just to write this post Absolutely goofy that they charge out the nose for wifi that basically doesn't work and crumbles under any sort of load.

Saw it on the privacyguides forum just now.In light of DivestOS announcing the discontinuation of their mobile apps what are good alternatives for mull, mulch, hypatia, and carrion? I was considering fennec f-droid but I'm worried their development will take a hit as well since Divest contributed to it.
