Cellular systems are too complicated for me to draw that conclusion based on the evidence available so far.
Among other issues, if you and your wife are both running GrapheneOS, except on different hardware, and she doesn't have the problem, it's not clear to me why the conclusion would be that this must be a software issue. If flashing your device to Google's OS made the problem go away, and flashing back to GrapheneOS made the problem reappear, that would start to implicate software.
ZoraIsHere You said I "should keep a log". What exactly do you meant with that? Is there a function on GOS to log calls or did you mean I should write down the exact moment the quality drops?
By "Can you keep a log?" I was not referring to using some logging software; I was suggesting that you, personally, note down the details of what you experience. I think it might be productive to record date, time, how long the call was before trouble occurred, whether or not the call dropped, and where you were at the time.
The symptoms described so far do not clearly implicate anything, so it's not yet clear whether this will turn out to be solvable.
