I am using a Pixel 3a for which the stable releases have been stopped. My phone is still checking for updates regularly, not finding any, which prompts another check for updates 3 minutes later. I am fine with not having the updates, but I would like to stop the error messages coming in.
As far as I can see I can disable these error messages, but only by disabling all system error messages completely. I would like to keep others if possible. Thus: Is it possible to stop the automatic checking for updates? (Then I just never do it manually, until I have a new phone)
Can I stop automatic checking for updates?

It is not possible to stop automatic checking for updates. You can however disable the System Updater app, and enable It when you want. Also note that just enabling the System Updater app won't trigger check for updates, So You'll have to manually check for updates by clicking the Check for Updates
option in the Settings app -> System -> System Update
fxm I am fine with not having the updates, but I would like to stop the error messages coming in.
Please note that the device isn't missing just feature updates, but also security updates. At this point it would be prudent to assume that a 3a is remotely exploitable and exploitable by somebody who gains physical control of the device.
I had a 3a, and prefer the size to the 6a I have now. But 3a devices are no longer secure.
