I'm coming from using Samsung phones for the last 6+ years. Now I'm using Graphene on a Pixel Fold. I spent zero time playing with the stock pixel fold os.

I know there is a wealth of info on all of GrapheneOS features on the website, but it sticks mostly to the security improvements made.

My question is what UI and visibility feature differences are there between the stock Pixel Google OS and the AOSP Graphene OS? Are they identical? What about options in settings?

Specifically with the pixel fold, are there any features that are not in graphene, that would be in the stock OS. If so, are these features that eventually get implemented?

csrcsr Pixel Fold is fully functional with GrapheneOS. It doesn't have anything special missing compared to other devices. The features taking advantage of it being a folding device such as using the rear cameras as front cameras in Google Camera work fine in apps supporting them.
