Looking to install on my new Pixel 7 pro and was wondering if its worth it to install gmail and gcal, or does it just defeat the purpose?

chaosone I use Google calendar and gmail, among others, and everything works fine. It doesn't work against GOS at all. GOS makes it very easy and safe to use Google and other applications.
Gmail can work with ANY email software, I recommend "fairemail".
You can synchronize with gcal using DAVx5.

Getting a GrapheneOS is a very good first step all on its own, and I think it's okay to start with one thing at a time. So I would say it's still definitely worth it.
I think of the endeavour as a leaky boat, and even though Google is a remarkably big privacy hole, GOS nevertheless does plug so many other leaks...
If I were to offer further advice (most here will agree, and select few will disagree), I would say it is a very freeing decision to abandon Google entirely as one of the next few steps and you may choose to do so further down the road as well. Think of it as a journey.
I, and so many others here, have successfully moved on to other, better, services, and much advice is available in the past threads (as well as many helpful people if you need further help).

an email from Gmail, proton or fairemail is still an email, except that Google doesn't charge you for it. An e-mail can be spied on, as you say, no matter who it's sent to. You have to keep that in mind.

I reccomend k9 mail (what I'm currently using) as a good replacement for gmail.
Setting it up was easier than fairemail, at least in my case.

You have to differntiate service vs client. Sure, in an effort to de-google, using K-9/FairEmail is better if you must (less proprietary code on your device), but the problem is that Google is still privy to all your conversations.

Free tiers of Tuta/Proton/etc is plenty for many, including myself. I only pay because I want to support and thank devs for their efforts.
Many, perhaps most, FOSS projects offer a service for free as a show of good will and desire to better current (broken) models (as well as to showcase and entice you). Google is free because they see you as serf.

Absolutely, toto, and I hope my comment made that clear. I just don't want C1 to see it as a final solution; as opposed to being a first step on the way to eventually switching to a service more respectful of one's sovereignty.
