Is there an open source voice assistant ?
Voice assistant

Not that I'm aware of. But then again, the 'Hey Google' functionality of Google Assistant will not work on GrapheneOS, in any case.

vvf69107 I have never tried a FOSS Assistant. Somebody else would need to advise on that, if indeed there are any.
If you install Google Assistant on GrapheneOS, you'll be able to use its functionality by manually launching the app first, but it won't start by simply using the 'Hey Google' voice command like on stock Android.
Anyway, this is off topic from the question.
Does anyone know of an open source voice assistant

Check out work by Futo, perhaps it may be useful.

Ignore the chair, there's substance in his worldview. A Graphene user as well - obviously.
Futo Voice input
available on the play store
or as a APK from this website:
https://voiceinput.futo.org/
https://sourceforge.net/directory/voice-assistants/
This may be of some use
Mjs this looks promising. Is there a site with more details? I am wondering if everything is processed on device. Do you like using it?
https://gitlab.futo.org/alex/voiceinput
It only needs mic permission
And network permission once at setup to doawnlod the language models.
Everything happens on device
I like it but use the slow model because the normal German model was not accurate enough for me.
