Is there a security threat on giving termux access to storage on Android? Will that bypass other security features that are on GOS?

As long as you trust the software you're giving the permissions to, there is no threat. And it certainly doesn't "bypass" any security.
Termux is, I believe, open source. So if you don't trust it, read the code.

Termux is handy for a quick SSH session, if you don't want to bother booting up your laptop or whatever. You can set up SSH keys the same as any OS and throw the public key on the server, for when you might need to get in to troubleshoot something small or quickly kick over a box. Connect a Bluetooth keyboard and you can legit get some work done.
It's also great for simple networking utilities like ping or dig.
Rsync works well, if you want to grab something off a network device--or vice-versa, I once rsync'd a photo library from my phone onto my computer over WiFi. The phone got a little hot actually, but it worked fine!
