Okay I know this is sounds silly, but please be nice.
If I was using GrapheneOS with gmail doesn’t that it make it a better option in regards to security and privacy then just regular gmail on stock? Or is a lot of shady stuff happening on their server side?

What are your thoughts?

Whether you get your emails through the Gmail app or some privacy respecting FOSS app. Google is the one receiving, analyzing and handling your emails. So it doesn’t matter much. The “shady” stuff already happened server side.
It is secure regardless of the app on your phone, but not private.
