If that's the case the chances of your device being compromised are very low. It's far more likely that something else is going on.

This could just as easily be caused by slow VPN servers or Tor. Something like that is far more likely than your device being compromised.

Messing with system apps/services can cause unexpected behavior and sometimes unexpected behavior is assumed to be a sign of compromise. For all we know, you disabling these important system apps/services have something in the background going haywire because it can't run properly.
Considering GrapheneOS is known for being very secure and has very good exploit protections, the chances of a GrapheneOS device being randomly exploited more than once are so small. It's far more likely that changes such as the ones you seem to be making are causing these issues.
Either that or you're someone rich and/or famous and/or powerful that you're being targeted by adversaries that have access to zero-days worth millions of dollars and are using them on you.
I agree that there's no evidence so far of a compromised device.
