I think you don't have to worry much if your threat model doesn't involve being targeted by 3 letter agencies. Sure the device identifier is now connected to your real life identity, but GOS doesn't hand out this information to any apps or services except SIM cards, so this link will likely not happen (and if so, what are the ramifications?). And there are many more ways to fingerprint you, so Google or others will simply generate a new fingerprint and countermeasures would need to be applied. You can go through this simple OPSEC process here and see if anything comes up that worries you compared to getting a new device.
On another note: Every time I buy a new device I have learned a lot about privacy in the meantime. My first Pixel I bought online, my second Pixel I bought offline with cash and set up on the store WiFi. My third Pixel I bought offline with cash in a very remote location, set it up in a far away coffee shop, put multiple profiles in there and never used a SIM card or disabled airplane mode.
I get more and more extreme, and it's fun (although way more than necessary for my threat model). What I'm saying is this: If you don't feel the need to buy a new device now, you'll have a better setup figured out once you buy it later.
