BeauTyXT is great and has the benefit of being on acresant if you wanted to try that out too.
Standard notes is great, part of proton now too if thats a plus or a minus for you i dont know. Good if you want it synced between other devices.
Fossify notes is great and simple.
Markor is great and more complex.
Roll your own with a cryptomator vault and txt files to avoid lock in and the ability to use any text editor securely.
There is notesnook and jolpin too, but I didn't get on with either very much myself.
