"AI" isn't really a single thing that one has or doesn't have.
For many years AOSP has included a very simplistic "learning" system for screen brightness, which could legitimately be considered "level 0 AI". The GrapheneOS text-to-speech system includes a pre-trained speech-generation model, but it doesn't learn on the device and doesn't store the text it is asked to pronounce. So far GrapheneOS does not include "AI" classification models, though they may appear in the medium term as an optional feature for a new photo gallery. GrapheneOS does not include "AI" that listens to microphones, scans files, makes appointments, etc.
Sometimes people post on this forum requesting that the GrapheneOS team add support for various Google AI features, often related to features of Google's phone dialer (I think one of the requested features is something that manipulates outgoing audio to remove background noise).
