Stayjuice Oh boy, I'll just state that this is not a good reason for switching. You're in for a ride, because GrapheneOS is a lot less fool-proof compared to iOS, especially if you've been on Apple devices for a long time. This same incident might happen just as well on GrapheneOS and solely depends on your password manager.

That sucks and it can happen on pretty much every password manager, so the best practice is to copy the password first, then hit "save automatically".

That's bad advice. I'd never ask there, just go straight to reddit next time, if you're looking for a solution. Apple support has turned out to be useless. You also should be able to regain access to your mail account via the recovery option that you have hopefully set. If not, you might have a problem.
Keep in mind that there is no iCloud equivalent on GrapheneOS. You will need to find solutions yourself for backing up your data that will be fragmented.
Stayjuice I’m considering installing the experimental build on my pixel 10 but not sure if it’s better to wait for future releases to come out. Is there any disadvantages to just using it on stock for just photos and video until there is a stable release out?

Stayjuice It’s going to be a pain transferring all of my emails and stuff to a new provider as I don’t believe you can use iCloud email outside of the Apple echo system? I’m a bit miffed that after all the money I invested in Apple products that their update broke the password app the staff said that if iCloud is full that generated passwords won’t save but at no point was there any warning when generating passwords (their words not mine)
You can use iCloud Mail and most of its features on every platform, since they run on simple IMAP. You can even include the custom domains feature in 3rd party apps like FairEmail, which is pretty cool. Updates can also break stuff on every platform, GrapheneOS is no exception. The "iCloud full not saving passwords" is made up by that Apple rep. That is simply not true.
Tl;dr: I don't believe that GrapheneOS will be the solution for your issues. I invite you to try it and find out if it suits your needs, but don't go into this with the wrong expectations. You will probably have to learn quite a bit about Android and 3rd party services along the way.
Edit: check out this reddit thread. It was explained there, that you can find recently generated passwords in the password app usually, it might still be there!
