Is your USB-c port set to charging only? If not, attach a physical keyboard. That should work. Your Pixel phone may have been shipped with an USB-A to USB-c adapter.
Treat all your data as already lost in the first place if you don't have a proper backup strategy. It's just a matter of time. Checkout 3-2-1 backup strategy.
Also don't rely on SeedVault, setup automatic backups in every app that allows it, manual backups in the ones that don't allow it, some apps let you choose if you want to use internal storage. It's way easier to backup from the file system directly. So you want as much as possible of your data there. Create a folder Backups besides Downloads and Documents and a sub folder for every app. Most apps that handle lots of user data have extensive backup settings.
Keep your pictures/documents end-to-end encrypted in the cloud. Check out ente.io and Cryptomator as examples. Zimly is a good S3 sync client. Just make sure it works in the background and if not, sync manually.
I was only able to restore everything because I used every possible backup strategy out there in parallel. A lot of the apps don't get restored properly with SeedVault. You absolutely need to have app specific backups. And even then you will spend some hours connecting the dots and changing the system settings.
