How many of the security patches the newer devices have are patching holes that only exist cause they're running newer OS versions?

EOL devices can't be considered secure anymore, at all, since they are missing critical security patches and don't receive any firmware updates from Google anymore. There is no way to make those devices secure again. Extended support is only provided for the time it takes people to get a new device, as threat reduction. Still not secure.
You should get a supported device ASAP.
BaronAfanas Some of the patches are for firmware. 0% of those are patches for new features. Worse, it is quite plausible that binary analysis of a patch to Pixel 6 firmware may reveal an attack method that works against Pixel 5 firmware.
EOL devices are not frozen at some level of vulnerability. Instead, an EOL device becomes more vulnerable every month.
