The issue is that emails are inherently less secure and private than for example a messenger like Signal or Briar (if you want to go all in). So if you can avoid using emails, I'd recommend to do just that.
But since we probably all have to use an email account at some point, your selection is good. Privacyguides recommends Tuta, Protonmail and Mailbox.org if you trust their research. They most likely won't track you, especially nor to the extent that mainstream providers do.
You can't really trust mail providers to not give your data to law enforcement in their jurisdiction. It will happen and it did happen before with ProtonMail (see above) and Tuta, although they are fighting this harder.
My point is: I wouldn't trust any email provider to not give in to law enforcement and shut down like Lavabit did, and we can only know in hindshight whether companies really protected your data.
So my strategy is and would be:
- Choose a good provider and jurisdiction you trust most (your 3 original ideas are top notch).
- Be aware that it's much more unlikely for you now to get tracked, depending on your threat model this might be enough.
- Don't share any data you can't have leaked to law enforcement and use good encrypted messengers instead.
I personally use Tuta on their revolutionary plan with my own domain and lots of aliases. I only share by mail what cannot be shared by better means.
