I switched from Joplin to Notesnook and never looked back. Love the ability to publish notes and share with friends. Clean interface as well.
nuclear I recommend Fossify Notes, a fork of Simple Mobile Tools' Simple Notes, which fits my needs perfectly. However, you may first try other note taking apps before deciding which one to use, since this one might be pretty limited and/or not fit your criteria.
I prefer Cryptee.
nuclear I have been using Bundled notes from the Play store. Has material you and neat organisation tools, altough limited number of folders or "bundles"

Also, it's really a personal preference, so "the best" is very, very subjective.
I like Joplin, not in every aspect, but maybe because I'm used to it. Used it for a long time. And it fulfills my needs. Obsidian and Notesnook look very good but they don't give me the way I prefer of creating notes and navigating between them. Again, the way I'm used to. :)
Tryptamine Great suggestion id never considered that, .. New Note Vault made... Now i have secure encrypted notes shared across devices... Whoo hoo!
I don't use a note taking app, I use the note to self option in signal. Works fine for my use case.
Standard notes is a really amazing app! Would recommend it any day of the week. They also have amazing backup features!
