    You only need to uninstall Play Games, not Play Services. (This would also brick your GMS install and require reinstalling all apps depending on Play Services as well, so highly recommend against doing this)

    Installing Play Games also requires installing a shared library for it, that's what you saw. You will not find it in the apps list, it will automatically be removed once its not needed anymore (likely after Play Games is uninstalled).

    It can't run or do stuff on its own, it basically just provides code for other apps, namely Play Games in this case.
