if by mistake I activated wifi network and it got me playstore starting to install some stuff that i can see in the notifications bar (even though i didn't log in any accounts) did this leak anything opsec-wise (i deactivated wifi a minute after and it stopped the download)?

i also did activate airplane mode only just after, although no sim have ever entered this phone, so i just want to know if i compromised anything

    ( I'd at least like to know for next time to avoid any of this mistake happening again for another phone, if it was indeed one. )

    Unfortunately, I cannot give you an educated answer on this one. Without a SIM you did not leak your IMEI but I don't know if there are identifiers that could be used google to identify you.

      when you first boot the phone there's no way to avoid it anyways right (as a stock os from google, just before the graphene install process)? airplane isn't activated by default (only way is to just quickly activate it when first booting it?), just want to confirm that

      You are guaranteed to "expose" your IMEI to Google as part of toggling oem unlock, it must phone home to check against a database to figure out if it's a carrier phone or not. You don't need to have a sim inserted for that.

        spring-onion so there's really no difference in terms of leaking as to wheether buy a new oor uused pixel phone to get graphene on?

          That depends on what you aim to protect against and to what extent but for the vast majority of people out there both options are quite equal really.
