Side of Burritos has a great video showing how you can turn GOS into a minimalist phone, maybe a version of that could help.
Another potential solution is using NextDNS which has excellent parental controls. This effectively disables internet access on a per app/service basis.
No matter the solution you use (including those built into the OS by other manufacturers like Samsung's), they are all easily disabled to continue feeding the addiction of our phones. That's like thinking taking away an alcoholic's car keys will prevent him from going to the bar. They'll find a way there regardless.
Instead, I recommend education and leading by example. I used to have all the social media apps and all the things but have removed them one-by-one. Now the only media consumption apps I have are Newpipe and JellyFin connected to my personal media server at home.
When you're hanging out with your friends, consider putting it in either minimalist mode as described in the video, turning it off, or simply leaving it in the car/home. That way, you are demonstrating to your friends that their company means more than anything going on in your digital life. You'd be surprised how much little things like this will rub off.
