What happens if uninstall Google Play Services?

I've been using GOS for a few months and it's been great. However, my setup isn't very privacy oriented to say the least as I had to replace my iPhone and get things to work quickly on GOS (skipped stock Android). As a summary:
Google Play Services installed
All apps installed from Google Play
Use Google maps, contacts, calendar and drive
Installed banking apps and use NFC for payments
Use WhatsApp, YouTube and YouTube Music
(Literally just realized that's a lot of Google usage)

I guess my main question is what happens if I uninstall Google Play Services? I know some things would stop working or not work properly just not sure what. Also, what would be your recommendations on how to improve general security and privacy? Alternatives or better setups are very welcome!

I think your understanding is correct, some things may malfunction / stop working. You won't get notifications for most apps unless they don't depend on Google play for them (unlikely). Many apps may function just fine minus push notifications. And I believe once you uninstall it, if you choose to reinstall it later the notifications may still be broken and you'll have to reinstall each app you want notifications to fix it.

Edit: My understanding is Google play can be a pretty secure way to get apps, so it's definitely more a matter of how much your concerned about Google regarding privacy.

With your current setup, most things will break or not work very well.
If you still have need for these apps, your current setop on GOS might be the least bad for you.
Otherwise you could look into FOSS alternatives like many of us instead of google :)
