GrapheneOS does not support Android Auto. Stock Android OS does support Android Auto and also does not require a SIM card. However, if you're going to want to use it to navigate/listen to music you will need a way to access those without data (i.e. download maps/songs for offline use, tether to your Pixel 7, etc).
