By all means, do factory reset just to get everything stock again and start from there. The proper advice has already been shared: don't mess with the core components of the OS by adjusting the permissions. The SETTINGS are where you make adjustments. Maybe you don't want to allow sensors by default to 3rd party apps. That's reasonable. Maybe you wanna enable all the exploit protections. A solid choice. But messing with system apps and worrying about shell, of all things....no. Stop that.
You installed GOS for a reason, I presume. You wouldn't buy a bullet proof vest and then take out the plates because you think they are faulty, would you? Are you a bullet proof vest expert? Or course not. Trust the product as you should and simply search up any apps that you are curious about to learn about them...not to tweak their permissions. Just for peace of mind, if you must.
