Unless you had a banking app not work or need Google Wallet for NFC payments, there really isn't any difference in convenience, The whole convenience over privacy as an argument beyond those doesn't work. No other alternate OS offers the same level of convenience alongside genuine privacy and security features, all of which can be toggled on or off wholesale across the OS not even per app if desired.
While I appreciate you reaching out to our community, the forum writ large is about security/privacy technology, our off-topic is for things adjacent to GrapheneOS but not really for discussions of other mobile OS or stock OEM derivatives as there are enumerate other places across the web for such discussions.
The only advice I can provide is to ensure you don't use a Google account identifiable to you, turn off wifi and bluetooth scanning in location and keep everything toggled off as required enabling advanced protection too and if you have had one already with things in the Google account toggled on for maps, nav, location it would defeat the purpose as it can be correlated to your existing account.
