I don't speak for the GrapheneOS developers, but if the question is whether some of them are likely to run some sort of focus group or voting system, then build a version with one or more replacement system fonts, and then test (in multiple languages), I am skeptical.
If the question is whether they would seriously consider a concrete proposal (one specific font) after somebody else had built it and found volunteers to test that it works for a variety of languages, that seems more likely.
I think the GitHub issue indicates that the project is not implacably hostile to the notion of a different font family, but is not planning to find one.
Said differently: open to the idea, yes. Open to taking the time away from something else to do the work... I suspect not for at least the next year.
