As mentioned by derpz make sure you deregister from the iMessage system. What's likely happening is these other devices still see your number as being in the Apple iMessage system so they are sending the text via iMessage, not SMS.

On these other people's phones, are their text messages to you blue or green? If the texts are blue that should mean iMessage sent it as an iMessage, not SMS/RCS.

I was hoping this was the culprit! But alas, I followed the instructions as given to no avail. I contacted my father to test this with me immediately after, but his message did not come through. Do I need to just wait a little while longer before it 'sets'?

I asked, and they are blue. So this should be the cause, right?

techliterateidiot blue (should) means that iMessage is treating the messages to you as iMessage messages, not SMS.

When your family, friends, etc message you in iMessage the chat bubbles should be green, according to Apple's documentation.

I don't know enough about Apple to help much further but I believe the problem is Apple and iMessage, so you may need to reach out to them or hope someone here can help. The problem is not your current phone, it is something to do with your migration from the iPhone and Apple's system.

Yeah, me and another person I'm having this trouble with are going to go to the apple store next week and see if they can help... But I'm a little anxious, I don't trust them to be chill with grapheneos (will they try to blame it?)

It can take a couple of hours or sometimes days to fully unregister from iMessage. That could explain why the test message immediately after deregister didn't come through.

If you use an iPad too, you probably need to deregister on that device too, as much as I remember it has to be deregistered per device, and not just per account.
