YMMV depending on your usecase of course, but my pixel 7 pro has 128gb, and I have owned it for around 3 years. I have 3 years worth of photos, long videos, apps, and whatnot and have only used 86gb (11gb temporary system files). I have a much less minimal app setup than many here (dozens of installed apps), and could easily slim things down if I needed to. I would say unless you plan to download movies, take many long videos without backing them up, or install large games, 128gb is plenty.
