Dragon I tend to leave most basic 1st party apps installed, even if I barely use them like Safari or Health. I disabled most permissions for third party apps though, that you can always do to improve the situation at least a little bit.
3rd party apps, quite a few. App count says around 90 total, around 15 or so are work apps. The rest is a mix of shopping, utility apps, messengers like Signal or Telegram, some Google apps and some apps I need for university.
I still have some stuff that lives on my server (I'm an avid self hoster), so some apps like JellyFin or Immich are installed too.
