When you delete a single profile, the encryption key for that profile is destroyed. This makes it impossible for anyone, even if they learn the PIN or passphrase that deleted profile used, to read any app or file data or any file names at all for files and app data stored in that deleted profile.
They can theoretically still see the number of files that were in that profile, in which folders they were, when the file was last modified down to the second, and the exact file size in bytes for each file, by using advanced forensic techniques. This can potentially be an issue, since they from modified timestamps and exact file sizes alone, especially for a set of files, might be able to recognize them, if the files have ever been posted publicly on the internet. This despite them not being able to read the file data at all. They can also see what apps you had installed in the profile.
The only way to get rid of all traces of activity in a profile, is to factory reset your whole device. This will destroy the metadata encryption key too, and render all user data including metadata such as file counts and file sizes and so on completely impossible to recover.
It is also worth noting that log entries about activity in the deleted profile, including potentially file names and account information used in apps, will not be deleted until you reboot your phone after having deleted the profile. Logs are never written to disk, but kept in memory until next reboot.
