Understand that stock android can never reach GOS security & privacy level. But I'd like to know what can we do to minimize Google data collection of stock(Google) android & (maybe) increase the security of the device.
Google makes the OS on Pixels. Google does not make the OS on a Samsung, Xiaomi, Sony, OnePlus, etc. device. Stock OS refers to what ships on the device, which is generally a fork of AOSP with Google Mobile Services integrate made by the OEM making the device. It's not clear what you're referring to. You appear to be referring to the whole Android stock OS ecosystem which is a bunch of operating systems with drastically different privacy and security across them, huge differences in their user interfaces, etc. It's too broad and too vague. If you're asking specifically about Pixels, then the best approach for privacy and security is to use GrapheneOS. If it's not a Pixel, then replace it with an iPhone or Pixel because most options do not take it nearly as seriously and are likely missing even basic privacy/security patches.
