Suppose I follow the right practices to diminish the chance of getting hacked via zero click exploit spyware - such as only downloading apps that are safe such as signal, proton mail and proton vpn via google play services - NOW the question is, Is it relevant the pixel phone that I chose ?- the newest is pixel 9, but if I were to get the 7 for example would that make a difference or am I good saving some money, buying an older model as long as I follow the right practices?

Pixel 8 and 9 have hardware support for memory tagging. You can check the GrapheneOS website to see a list of recommended devices.
