I don't have the technical skills to dive deep into your issue specifically, unfortunately, but my past experience can maybe help?
Many years ago I had an Android device with LineageOS, it was randomly crashing too, multiple times during the day, it had a similar setup than when I was on stock, except that on stock it wasn't crashing.
I found out that it had something going on with wifi, basically sometimes during the day, my stable wifi connection would drop, it's something I had noticed on stock too but I thought that it was maybe just a power saving feature.
Well it turned out that it wasn't, on stock when the connection would drop, it would just connect again, but on LineageOS it would crash the phone. Most likely I had a faulty WiFi module because I was the only one having that issue.
Now what was actually happening behind the scenes might have been way more complicated than that, but the tough part is that you can't assume that your (physical) phone isn't the problem just because it seems to work on stock, just be careful about that.

Now considering you still haven't received an answer, you might wanna try out things, for example enable airplane mode for a day, disable wifi or bluetooth for a day, uninstall an app you installed not long before the crash started, etc...
Otherwise you could just try a factory reset or revert back to stock to see what happens.
I know that you would prefer a "real" answer but yeah unfortunately if no one else answered, it is probably because no one could help you with the problem.
