Graphite is the spyware tool from Paragon (essentially NSO 2.0) targeting WhatsApp. From what I understand it hasn't been documented going up against GOS yet. But I imagine it would have difficulty functioning within a GOS environment.
One thing GOS does well is make persistence very difficult for malware. Basically malware isn't able to remain within the device given how GOS handles programs, and classes of vulnerabilities such as 0-clicks. If Memory Tagging works on WhatsApp, I'd bet that would also cause issues for something like Graphite.

You can read through that section for more in-depth understanding. But you have nothing to lose by rebooting your device daily. Organizations like the Cyber Centre, Citizen Lab, EFF, and CISA recommend doing that daily or weekly for good cyber hygiene. Keep in mind the reboot timer (in security settings) essentially accomplishes this if you set it low enough over night. Just be aware some functionality is lost until you unlock your device for the first time.
Lastly, keep in mind that spyware tools like Graphite or Pegasus are targeted use for a variety of reasons. They're commonly used for attorneys, journalists, politicians or civil liberty activists to name a few. If you're not in those professions, it's unlikely you will stumble across those types of malware. Anything is possible, just not something every individual needs to be mindful of.
