Just did a factory reset. All I am out in the end is the set up time. Thankfully @Dumdum provided a link to show its a known issue and upon reading it my stupid self was reminded that Factory Resets are a thing and I don't actually have to buy a new phone. ;)

What baffles me is that the default Keyboard can briefly be seen in the picker in the screenshot which you provided. This shouldn't happen if you actually disabled it. Am I right?

Sorry you had to go through that. Even though you could still factory reset, it's not fun to think even for a little while that such an expensive device is no longer usable.

Just a reminder not to disable, uninstall, or change permissions for any "system" apps. Sometimes nothing bad happens, other times something like this does.

Anyway, I've changed the title because your phone wasn't actually bricked.

Actually, I've been messing around and there is an issue (not me just being an idiot).

Steps to replicate: THIS WILL REQUIRE A FACTORY RESET TO GET OUT OF

Install Fossify Keyboard (https://github.com/FossifyOrg/Keyboard/releases/tag/1.0.0 )
Enable Fossify Keyboard
Set Fossify Keyboard as your active keyboard and use it to type something and don't switch to another keyboard afterwards.
Use a Password (not a PIN) for first boot security

The above steps produced the exact same circumstance as the OP.
Video of the complete process from factory reset all the way until the bug has been shown and another factory reset is needed to make the device usable.

Honestly, don't install Fossify Keyboard and 2024102100 on the same device at the moment. I'm not sure if the issue is with Fossify Keyboard or 2024102100 (I'm inclined towards the Fossify Keyboard) but using both and a password for first boot unlock is just asking to have to factory reset your device.

That's bad enough when you are starting with a basically clean install, it would be substantially worse if it happened on a device that has been in use for a while.

Had the same issue once. Just connected a Bluetooth keyboard (not once connected before). Worked.

Something for someone to try, but I'm kinda tired of bricking and resetting my phone and have just actually started installing my apps. So that can be a test someone else runs.

I've just decided that my Owner profile will only have the default Keyboard enabled and any others that I install will be disabled for that profile.

So despite Fossify Keyboard claiming that the latest release fixed this issue, it didn't.

On the plus side, Rebooting in safe mode will let you get around the issue.
Press power until the Power Off/ Restart/ Lockdown option comes up and then tap and hold the Power Off option until a box asking if you want to reboot to safe mode pops up. Go to Settings -> Apps navigate to Keyboard, disable it, restart your phone.

JollyRancher just out of curiosity: why does it have to be the Fossify keyboard? I find most of their apps to be pretty lackluster (I use the calendar from them, which is better than Etar) and I often find the alternatives offer a way better experience. I think you should check out HeliBoard or FUTO keyboard. And while I can't confirm that those will not also run you into the same issue, I find them more mature in almost every way possible.

It doesn't. I just happen to (generally) like it. Then I ran into the issue and it got me curious. Currently I use HeliBoard on my owner profile.

I updated this thread because I saw that Fossify updated the Keyboard and (supposedly) fixed this exact issue. Except it turns out that they didn't.

Fossify Keyboard as your active Keyboard on Owner plus Password Unlock means that upon reboot you won't be able to use your phone at all until you boot in safe mode, log in, and disable the Fossify Keyboard.
