How disable "phone" app?

I like the fact that i have many options on Graphene. But why can't i deactivate the phone and the messeges app?
I don't need them and i don't like how many permissions they have that i can not modify.
Is there a secret way do disable those apps?

You can build your own custom fork of GrapheneOS yourself from source, and leave those apps out: https://grapheneos.org/build

There's a fair chance that something would go wrong with the resulting system, but in theory debugging and fixing whatever might go wrong would be a simple matter of programming.

Yes.

Step 1 - Download and install any other Phone/Messaging app like Google Dialer, Fossify etc.

2 - Make that app default phone/messaging app.

3 - Disable GOS dialer/messaging app.

4 - Uninstall that previously installed phone/messaging app.

SMS and Phone are system apps.
You are not supposed to disable them or change their permissions.

What would be the Benefit of disabling them. They are system apps that respect your privacy
