I now have to add to this:
My Pixel 7 Pro (not my Pixel 8 Pro!) has the same problems, which others has mentioned here.
As AlphaElwedritsch has mentioned, a switch to 2.4G does the trick.
Because I am using my old iPhones as WiFi hotspot, it helps to switch on „Increase compatibility” in their hotspot settings (Settings/Personal Hotspot), then my Pixel 7 Pro finds it and I can immediately switch off this „Increase compatibility”.
Fun fact: after I have done this one time, the P7P finds its iPhone hotspot next time without the trick.
And yes, of course my two iPhones are stored as WiFi hotspots in the Internet/WiFi settings of my Pixel phones! ;-)
And since I had made this update on both Pixel phones they don't connect to 5G any longer, but I thought, this has another reason (maybe my carrier has some trouble with the Base stations).
This I have tested only at home in my flat yet, not on the street. I'll have to have a look tomorrow, I usually have the Pixel in my rucksack when I'm out and about, not in my hand.
