I just installed GOS, but the USB File Transfer is greyed out. It's not the cable (I tried it on another device). Also, I already have developer options turned off. Anyone can help me?

I understand correctly that you have successfully completed the GrapheneOS installation and now want to transfer files to the device via USB, right?
By the way, the developer options are not required for file transfer.
Have you checked the following settings?
Settings> Security> USB peripherals
and Settings> Security> USB-C port
?
Depending on the settings - when you connect a USB cable, a pop-up window usually shows up saying something like "charging device. Tap for more options." If you tap it, you should be offered several options, including "File transfer".
In addition to what @Murcielago said, it's almost always the cable or port to blame when all other conditions are met. Pixels are finicky about data transfers. I often have to use an inconveniently located USB port on the PC, or swap the cable to get them to work.
My pixel was able to work after an GOS update. However, file transferring works for about a few minutes then drops.

Could you please describe the steps of the attempted data transfer in more detail?

Sorry to bring up the cable again, but as mythodical rightly says and as highly recommended in the web installer instructions - did you use the cable that came with your Pixel and check the settings i mentioned before?

I am in the process of moving over to using one Owner profile for everything and need to transfer files. The USB options are greyed out in profiles other than Owner. lmao why.... Just added another reason why I'm moving to one profile instead of a secondary profile as main.
edit: anyone reading this in the future, going to Developer Options -> Default USB configuration -> set to File Transfer, fixed the issue. Why you got to do this? Who knows.
