It matters in so much as regardless of whether you are able to manage it in a way where there is no or negligible impact to you, you by the act of downloading and using it communicate your acceptance of this unacceptable behaviour.

I disagree, assuming your buying a "degoogle phone" as he specified, because you disagree with the T&C Google forces you to agree to, if you use their products.
This involves licensing to google all your IP from services of theirs that you use.
That mentality would naturally extend to banks and their apps which also are well known to force you to essentially license certain IP (like your spending habits, apps you run, how when and where you use your device, etc) to them.
