iOS should at least be compared to a Play Store install.
Not sure what would be achieved here. Of course I could limit the freedom of AOSP based systems to such extent that I end up having iOS like structures.
However for an end user that prefers privacy, it will be interesting what can be achieved. On iOS you simply run into privacy limits (towards Apple) you can't overcome and would easily be able to pass on AOSP and especially GOS.
There are plenty of great reasons to use iOS over GrapheneOS. Out of the box simplicity (e.g. no installation necessary), interoperability with other Apple devices, design, compatibility of banking apps, status etc.
Just security and especially privacy are not good reasons to switch, they can however be dispensable enough to switch for other reasons. That's what OP is contemplating and they got a point.

In this scenario probably both the iOS app store and the Google Play store would be targeted (the vast majority of smartphones in the world still run on Android). You're right that on GOS it wouldn't be as effective due to the sandbox and the option to simply not use the Play Store.
