Sounds good but I have a couple problems from the top of my head, for example you register in some website with IP A in Country A and then you got an email from that site to confirm that registration but the mail app is routing out by IP B in Country B, so you put both apps forehand in the same node or you get the risk of get blocked because then you open the link from the email into the browser with another IP... I think it's a cool idea but you need to be sure what are you doing or could be a headache.
I think Mullvad has the best service in VPN IMHO, every server is on ram and volatile, they can now re-route with something they call Wireguard Obfuscation and of course you can split the tunnels per app, also the proveed already that will not give any customer information to anyone since your customer number it's just a hash and you can pay by real mail :)
