#1. How many profiles do you recommend me to create and on what profile to install what apps?

I’m trying to degoogle but still on transition phase so the apps i currently need are:

Gmail, GDrive, Youtube, Google Keep, Google Voice, Google Maps
Facebook, Whatsapp, Messenger
Signal, SimpleX Chat
Dating Apps, Banking App, Shopping Apps, Food Apps, Uber/Lyft, Tiktok, Voip Apps, Musi app (music), Chatgpt, Aegis, etc

#2. Is it possible to connect to different VPN locations on each profile?

I would recommend just sticking with the owner profile for most people unless they know what they're doing and why they're doing it.

When I set up another profile and entered my Mullvad code I ended up with another device on my account. Each profile will count as a device as far as a vpn is concerned.

The number of profiles depends quite a lot on your needs. My advice would be to start with just a few profiles (less is more) and then slowly add more as needed.

You write that you want to degoogle your phone but still use some apps that require Google services: That's a great application scenario for multiple profiles: Just try one profile without Google services and another in which you install GSF and, if necessary, Google Play services and Google Play Store.

I don't think you should be too dogmatic about this - depending on your threat scenario, of course. Just test it out. Maybe over time you can replace some apps that require Google services with FOSS and move them to another profile. Or you might realize that you can't do without Google - not the end of the world either.

The nice thing about profiles is that you can delete them and create new ones at any time if they no longer fit your setup. I also had to try out a lot at the beginning (and i still do) and installed and uninstalled many apps several times until it fitted into my everyday life.

It's good to get inspiration here in the forum (I did too) but in the end, after some trial and error, I'm sure you'll find a setup that works well for you.

The usage of user profiles depends on what you want to achieve. Some people might have all the apps depending on Playstore / Playservices, on the same user profile. And those that don't depend on them, on a different user profile. All the apps are sandboxed regardless and only have access to the data you give to them trough permissions etc. Generally speaking, most people don't need to use multiple user profiles.
There is no global VPN connection, but rather per-profile connection. Meaning you can connect to different locations on each profile.
You can use the 'Install available apps' feature when creating a new profile, to install the same app you have on the owner profile, to secondary ones. You could also just install the same app on multiple profiles normally.
