Camera and microphone aren't included in the sensors. You can see what "sensors" permission means by going to the app settings > permissions > 3 dots in upper right-hand corner > all permissions > sensors. It says:
Allows the app to access data from sensors monitoring orientation, movement, vibration (including low frequency sound) and environmental data
In practice, I guess all sensors permissions do is allow you to see if your photo/video is level and to automatically change from portrait to landscape.
If you don't want the camera to have access to the camera, just remove camera permissions in the app's permission settings, or you can turn camera access off for all apps by toggling it off in the quick settings tiles above notifications, then turning it on again when you need the camera.
