Disable or uninstall stock apps

Should I be disabling stock apps (camera, dialer, messages etc) or is it safe to uninstall?

Also if I uninstall and wanted them back is there a way to download them again?

Only asking because I've replaced most of the stock apps with apps I prefer to use instead and I wanted to know if I'll get any crashing or errors if I uninstall them so far I've just been disabling them but would be happy to free up space if it's ok

I would not mess with the default apps, that includes taking away permissions they have by default. Some provide critical functionality that a 3rd party can not fulfill. The stock camera for example provides system media capture intents, that's something say, the Google camera can't do because only the system camera app is allowed.
