I've logged in to the same Google account across a few different profiles and Google lists each of those profiles as different phones of the same make and model and hasn't merged them or anything. Do they know? Maybe, but I doubt Google goes through the trouble. GrapheneOS users are just a drop in the bucket for them. I don't think they care and if they did, they'd probably decide it's more trouble than it's worth for them to ID us across profiles.
