italian_job the first party native 'Apps' app repository has settings to disable auto update and so long as you don't remove the notification (Apps are already fully up-to-date.) then you will be notified.
Play Store also has the settings globally and for each app (in the app listing top right menu) to disable auto updates.
However other than for users on metered/limited internet connections apps should also be kept up to date as good practice I'm sure you'd agree.
If the main question is to keep all apps auto updated the native Apps app does this with unattended updates as it targets the latest SDK, same for Play Store, however stock F-Droid demonstrating their desire to focus on compatibility over security does not. For users who wish to keep their FD repositories updated with a more current and up to date approach apps such as Droid-ify can facilitate this to a better degree.
